Michelin Guide 2026: A New Star for Japanese Cuisine

The Michelin Star is the most prestigious award in the world of haute cuisine. It is awarded by the authoritative guide Ghidul Michelin. This award is a sign of the highest quality and craftsmanship. To receive one, two, or, most rarely, three stars is the dream of any chef. Michelin inspectors remain anonymous. The evaluation criteria are very strict. They include the quality of ingredients and cooking techniques. The originality of dishes and consistency of quality are also evaluated. For consumers, a Michelin star is a guarantee of an exceptional gastronomic experience. This award often radically changes the fate of a restaurant.

Japan — The World Capital of Stars
Japan is one of the world leaders in haute cuisine, ranking second in the number of Michelin three-star restaurants. According to the July 2024 edition of the Michelin Guide, Japan has 20 three-star establishments, second only to France (30). This number confirms the high level of culinary skill and respect for ingredients. Most of these elite restaurants, which value precision and seasonality, are concentrated in Tokyo.

New sensation: results of the Michelin Guide Tokyo 2026
On September 25, the full list of restaurants included in the 19th edition of the Michelin Guide Tokyo 2026 was presented. This event once again confirmed that Tokyo remains the city with the most profound and diverse gastronomy in the world. This year, 18 new restaurants received their first stars.
Key highlights of the 2026 Guide:
  • New Third Star: Japanese restaurant Myojaku was upgraded from two to three stars.
  • Promotion of Sushi Restaurants: Three establishments, including Nishiazabu Sushi Shin, were promoted from one to two stars.
  • Green Star: TROIS VISAGES received a Green Star for its outstanding efforts in sustainability.
  • Mentor Award: 97-year-old chef Kenjiro Kanemoto (Nodaiwa Azabu Iikura Honten) received an award as the oldest active chef recognized by Michelin.
Gwendal Poullennec, International Director of the Michelin Guide, noted that Tokyo perfectly combines centuries-old traditions with innovation. This applies to sushi prepared using Edo-period techniques and kaiseki cuisine.
